It’s fall again and it’s starting to get chilly where I live, so here’s some pumpkin soup to help warm you up from the cold! Follow the video for step by step instructions 🙂
Ingredients:
1 Tablespoon Oil
1 Cup Carrot (small dice)
1 1/2 Cups Onion (small dice)
2 Tablespoons Garlic (minced)
1 Teaspoon Salt
1 Teaspoon Pepper
1/3 Teaspoon Nutmeg
1 Quart of Vegetable/Chicken/Beef Stock
1 Large Can (29 oz) Pumpkin
1 Can (13.5 oz) Coconut Milk (light or whatever kind of milk you prefer)
