Marinated Tomato Salad

Level: Easy

Makes: 4 Servings

This is by far one of my favorite summer side dishes. Yellow cherry tomatoes were on sale this week, but really any type of tomato is good.

Ingredients:
8 oz Mozzarella Ball, cut into bite-sized cubes
1 pt Cherry Tomatoes, halved
1/4 Cup Balsamic Vinegar
1 Tablespoon Dried Basil or 2 Tablespoons Fresh Basil, chopped
1/2 Teaspoon Ground Pepper

Tools:
1 Chef’s Knife
1 Cutting Board
1 Medium Mixing Bowl
1 Slotted Spoon
Plastic Wrap or Lid for Mixing Bowl

Directions:
Make sure tomatoes are cut in half or quarters and the mozzarella is bite-sized.  Combine all ingredients together in a bowl; stir to distribute ingredients as evenly as possible. Cover with plastic wrap or lid and place in refrigerator to marinade for at least 30 minutes. I prefer to let mine marinade for about 3 hours, but if you’re pressed for time 30 minutes will work.
