Super Fluffy Banana Muffins

Level: Easy

Makes: 12-14 muffins (depending on amount of bananas)

200 Grams All Purpose Flour
5 Grams Baking Powder
5 Grams Baking Soda
160 Grams Sugar
0.1 Ounces salt
0.1 Onces Cinnamon

3 Large Bananas (Approximately 325 Grams)
80 Grams Butter
1 Large Egg

Kitchen Scale
Large Mixing Bowl
Medium Mixing Bowl
Small Sauce Pan
Rubber/Silicone Spatula
Electric Mixer/Potato Masher/Fork
Large Whisk
Spoon/Cookie Scoop
Oil/Non-Stick Cooking Spray
1 Muffin Tin
Cooling Rack

Preheat oven to 350 degrees Fahrenheit/ 176-177 degrees Celsius. Combine dry ingredients in a large bowl and combine well with a whisk. Melt the butter in a small sauce pan. While the butter is melting mash up the 3 bananas. Mix the egg in with the bananas then mix in the melted butter gradually. Use a spatula to fold the wet ingredients into the dry ingredients. Oil/Spray the muffin tin and use a spoon or scoop to transfer the batter into the tin until the batter is 1/2-3/4 up the side of the tin. Bake for approximately 20 minutes or until the muffins pass the toothpick test.


Side not: if you’re filling your muffin tin 3/4 up the sides you should get 12 muffins, but you can keep an extra muffin tin around if you have extra batter.
