Borscht

Level: Easy

Makes: 12 Servings

Borscht is truly on of the healthiest meals I can think of. It’s packed with vitamins and minerals, protein, and carbs. I’ve also convinced many people who wouldn’t normally eat beets or vegetables in general that this is a way to make healthy food into something delicious.

Ingredients:
2 Large Beets, shredded
2 Medium Potatoes, shredded
2 Carrots, shredded
1/2 Head Cabbage, shredded
2 Large Garlic Cloves, minced
1 Medium Onion, minced
1-2 Tablespoons Olive Oil
Beef Stewing Meat, as much as you want (optional)
8-10 Cups Beef Broth (substitute water or vegetable stock if making vegetarian version)
2 Bay Leaves (optional)
1 Teaspoon Ground Black Pepper

 

Yogurt Topping (from creamy carrot soup recipe)

Tools:
1 Cutting Board
1 Chef’s Knife
1 Mandolin Slicer or Grater
1 Large Pot

Directions:
In large pot saute the onion, garlic, shredded carrot, and beef together in the olive oil. Add in the rest of the vegetables and seasoning. Cover all ingredients in broth. Simmer with a lid on for 45 minutes to 1 hour or until everything is tender.

Serve with sour cream or my herbed yogurt topping.
